The Region
Coffee production in India is dominated in the hill tracts of South Indian states, with the state of Karnataka accounting for 53%, followed by Kerala with 28% and Tamil Nadu with 11%. Monsooned Malabar is a unique coffee, produced only in India.
Its name refers to both a processing style and place. The name is derived from exposure to the Monsoon Winds of the Malabar coast.
Particularities
Whole unwashed coffee is spread on the floor of the open warehouse and is raked from time to time for exposure to the dampness in the atmosphere. After this, the coffee is packed loose in gunny bags and stacked in rows with sufficient space between two, for the continuous and unifrom interplay of Monsoon Winds through the rows of stacked coffee bags.
The coffee is then bulked, repacked or the bags are changed or restacked. In six to seven weeks’ time, the coffee changes color to golden yellow when it is considered to have been fully ‘monsooned’ to give the characteristics flavor associated with it.
The coffee is handpicked to eliminate any improperly monsooned beans and made ready for shipment.
